Chicken marinated with lemon and mint

Chicken gets a fresh flavor once it is marinated in a mixture of lemon and mint. Prepare it from day to day because you have to leave to marinate meat overnight.


Ingredients

3 tablespoons olive oil 60 g roasted almond flakes, chicken broth 150 ml, 110 ml white wine, pepper, salt, a handful of mint leaves, lemon juice 3 pcs, 8 cloves garlic, 2 pieces boneless chicken breast

Method for preparing
Cut the chicken into cubes and marinate in a mixture made ​​from chopped garlic, lemon juice, a tablespoon of olive oil, mint, salt and pepper. Mix well and let the meat in a covered container in the refrigerator overnight.

Before dinner Heat in a pan 2 tablespoons of oil and fry the chicken pieces for 10-15 minutes until well browned. Get them in a bowl and drain the fat from the pan.

Put the pan back on high heat and pour wine. Let it boil until reduced by half, add broth and juice from marinade and simmer over high heat until reduced by half. Season with salt and pepper to taste.

Serve chicken with sauce decorated with toasted almonds and mint leaves.
